National Cheesecake Day: How One Simple Trick Makes Your Cake Shine

Fresh berries are almost always the crown jewel of a cheesecake. But have you noticed that strawberries or raspberries taken straight from the container are often dull? Even if the berries look clean and appetizing in the box, they have traveled a long journey from the field to the store shelf.

So how do you get berries to shine beautifully while making them completely clean? And why is it essential to wash store-bought berries in the first place?

Why Must Store-Bought Berries Be Washed?

Thorough washing helps remove:

- Pesticide residues: Chemical agents are used on farms to control plant diseases, mold, and insects, and their residues remain on the surface of the berries.

- Bacteria and viruses: Many people pick, package, and transport the berries, and other shoppers may touch them on store shelves. Pathogens such as E. coli, Salmonella, and norovirus have been found on the surface of berries.

- Dirt, dust, and grime: Washing removes mechanical dirt and road dust.

Why Plain Tap Water Isn't Enough (and Why Choose Baking Soda?)

Plain tap water washes away only loose dust, but it doesn't remove detergents, microelements, or the oil-based coating applied or retained during growing and transport.

If you wash berries with water alone, the result is:

- A dull, "grayish" appearance on the cake and in photos.

- Excess moisture that melts the cake frosting and creates unsightly bleeding color spots around the berries.

Some pesticides are oil-based so that rain doesn't wash them away in the field—and that's where baking soda comes to the rescue.

Benefits of Baking Soda:

1. Breaks down chemicals more effectively: Baking soda (sodium bicarbonate) is a mildly alkaline substance. An alkaline environment helps break down and neutralize certain types of pesticides (such as fungicides and insecticides), making them water-soluble and easy to wash away.

2. Backed by scientific research: Studies (e.g., a study from the University of Massachusetts) have shown that a baking soda solution removes pesticide residues from the surface of fruits and berries significantly better than tap water alone.

3. Food-safe and non-toxic: Unlike dish soaps or detergents, which should never be used on food (because porous berries absorb chemicals), baking soda is completely safe and leaves no aftertaste when properly rinsed.

Food Styling Secret Weapon: The Arm & Hammer Baking Soda Bath

In food styling and photography, one simple trick is used to give berries maximum shine, cleanliness, and freshness: an Arm & Hammer baking soda bath. It acts as a natural alkaline cleanser that neutralizes and removes surface dirt without damaging the delicate structure of the berry.

Guide: Baking Soda Bath for Perfect Berries

To make your cheesecake decoration look like a magazine cover, follow this simple 3-step spa treatment before decorating:

1. Create the cleaning solution

Mix 1 liter of cold water and 1 teaspoon of Arm & Hammer baking soda in a bowl. Stir until the baking soda is completely dissolved.

2. Give the berries a "spa treatment"

Gently submerge the berries (strawberries, blueberries, raspberries, blackberries) in the baking soda water. Soaking time depends on the firmness of the berry:

- Firm berries (blueberries, strawberries): 5–10 minutes.

- Delicate berries (raspberries, blackberries): 2–3 minutes maximum.

You will immediately see the water turn slightly cloudy—this is the dirt and surface residue separating from the berries, leaving their natural color deep and vibrant.

3. Rinse and essential drying

Remove the berries from the baking soda water, rinse under cold running water, and lay them out on paper towels to dry.

Important: Never put wet berries on a cake! Let them air-dry completely. The result is plump, richly colored, and naturally shiny berries.

Try it out and enjoy the beautiful result!
